Crème Brûlée with Violet Candies

INGREDIENTS:

 200g of violet candies
 5 egg yolks
 80g of whole milk
 350g of liquid cream
 

DIRECTIONS: 

  1. Crush the 200g of candies
  2. In a mixer, add your egg yolks and 100g of your candy powder and mix for 30 seconds at speed 3.
  3. Add the whole milk and cream to the mixture. Mix for 20 seconds at speed 2.
  4. Pour into a ramekin, and cook for one hour at 210°F.
  5. After letting it rest for 4 hours in the cold, sprinkle the rest of your powdered candies on top.
  6. Caramelize with a blowtorch and enjoy!
