Made exclusively from whole goat's milk, this cheese has held a Protected Designation of Origin (PDO) status since 1996. Alpine, Saanen, and Poitevine goat breeds, raised in a preserved environment, are at the heart of this exceptional cheese. The richness and diversity of the pastures imbue the milk with unique qualities, further enhanced by traditional manufacturing and aging methods.\u003c\/p\u003e\n\u003cp data-path-to-node=\"1\"\u003eThe whole goat's milk is lightly renneted to obtain a lactic curd after approximately 16 hours of coagulation.
