Chabichou is an iconic cheese from the Nouvelle-Aquitaine region. Made exclusively from whole goat's milk, this cheese has held a Protected Designation of Origin (PDO) status since 1996. Alpine, Saanen, and Poitevine goat breeds, raised in a preserved environment, are at the heart of this exceptional cheese. The richness and diversity of the pastures imbue the milk with unique qualities, further enhanced by traditional manufacturing and aging methods.

The whole goat's milk is lightly renneted to obtain a lactic curd after approximately 16 hours of coagulation. The curd is then hand-ladled into specific molds, then unmolded, salted, and left to dry. The aging process lasts a minimum of 10 days, during which the cheese develops its characteristic rind and subtle aromas.

Recognizable by its truncated cone shape, known as a "bonde," it measures 6 centimeters in height with a similar diameter at the base. Its rind is thin and wrinkled. When sliced, its white paste offers a homogeneous, melt-in-the-mouth texture that becomes more brittle with aging.

FLAVORS: It reveals balanced aromas, blending milky freshness with slightly nutty notes, accompanied by a delicate, creamy flavor and a subtle acidity.

HOW TO ENJOY IT: Chabichou du Poitou can be enjoyed as an aperitif, accompanied by a glass of dry white wine, or at the end of a meal to finish on a gourmet and refined note. It also has its place in culinary recipes, where it adds a touch of authenticity and character.
