The Fromagerie Delin, located in Gilly-lès-Cîteaux in the heart of the Côte de Nuits, has been making traditional cheeses of the Bourgogne-Franche-Comté region for 50 years. This incredibly creamy, rich, and indulgent cheese was created at a time when fat was considered a nourishing, flavorful, and beneficial product. Back then, it graced the tables of high-end gastronomic feasts and was described as the "foie gras of cheeses." It is a soft, triple-cream cheese that was officially registered on January 19, 2017, under the Protected Geographical Indication (PGI), the European symbol guaranteeing quality and origin.
FLAVOR: Its beautiful bloomy rind appears after a few days, imparting a rich taste of butter and cream, complemented by hints of hazelnut and mushroom notes stemming from the rind.
HOW TO ENJOY IT: Allow it to come to room temperature, then gently spread it over a piece of crusty baguette. Accompany it with berries and nuts. Savor it with a light, fruity wine, or pair it beautifully with a Champagne of character.
