These delicacies are very flavorful because of the spices they contain, and are also very healthy as the mother dough is kept for several weeks before being baked. One of the reasons why they keep so well without any addition of preservatives.
They were also called travel's cakes as stage-coach travelers used to take some with them that they would enjoy during their long journeys on the roads.

Bonjour, glad to hear you enjoyed the fresh flavor of these wonderful cakes. Indeed, some people find them a bit too dry compared to others containing sugar. The thing is that our supplier Mulot&Petitjean perpepetuates the traditional recipe dating back to the 18th Century. They keep the mother dough for weeks before baking, an excellent healthy fermentation process, which gives them their distinctive texture and thanks to which they do not have to add any additives or preservatives. They do not add any sugar either this is why they are not that moist, they prefer to opt for top quality honey which gives them this unique fresh flavor in addition to the candied lemon. These cakes contain 48% honey.
