A classic of Mediterranean cuisine made with eggplants and tomatoes from Provence. The eggplants are trimmed, washed, then cut into large pieces and fried in sunflower oil. They are served with a tomato coulis cooked in olive oil and scorched onion and flavored with a hint of garlic and fresh parsley. Simply delicious on side of BBQ, kebabs, patties!
