Since the creamery's creation in 1907, three generations of passionate cheesemakers have followed one another, legacy-building and perpetuating the values of tradition and expertise. Today, Jean-Charles Arnaud maintains the aging secrets passed down by his ancestors.
At the heart of the Haut-Jura Regional Natural Park at an altitude of 1,150 meters, the Fort des Rousses houses more than 100,000 wheels of Comté. It was in 1997 that the Fort des Rousses—the second largest military fortress in France—was converted into aging cellars.
It all begins in the pastures of the Haut-Jura, where the cows' milk is infused with hundreds of flower varieties. These wheels are then taken to the master affineur (aging specialist), who evaluates the maturity level and aging potential. He observes the texture of the paste. This regular monitoring is essential for moving the wheels into the appropriate maturation cellars.
FLAVOR: Its texture is smooth with a long-lasting aromatic combination on the palate. A powerful blend of fruity and roasted notes, you will perceive toasted almonds, melted butter, spices, and citrus on the palate.
HOW TO ENJOY IT: Comté can be enjoyed at any time of day. Because it melts beautifully, it also serves as an ingredient in many dishes. Its creamy texture and fruity notes pair well with Jura wines such as a Chardonnay or a Chenin Blanc.
