Goat Cheese Mousse

INGREDIENTS:

60 g of 100% Peach Orange Blossom jam from Favols
200 ml of goat's milk, cow's milk, almond milk, or soy milk
1 level teaspoon of agar-agar powder
2 egg whites
300 g of goat cheese
40 g of liquid honey or maple syrup
 
DIRECTIONS: 

Mix the milk and agar-agar in a saucepan. Bring to a simmer and let it simmer for 15 seconds.
Beat the egg whites until stiff peaks form.
Mix the goat cheese with the liquid honey.
Gradually incorporate the milk with agar-agar into the cheese mixture, then fold in the egg whites, being careful not to deflate them.
Allow to cool, then refrigerate for 2 hours.
Serve with the 100% Peach Orange Blossom jam from Favols.
