
Roasted Eggplants with Unctuous 'Fromage Blanc' & Mint
INGREDIENTS
3 eggplants
2 tablespoon of liquid honey
3 sprigs of mint
4 tablespoon of olive oil
200 gr Isigny Sainte-Mère Unctuous 'Fromage Blanc'
Half a clove of garlic
Half lemon juice
Salt
PREPARATION
- Preheat the oven to 200°C.
- Slice the eggplants into quarters lengthwise (if they are too thick, cut again lengthwise).
- Place them on a baking sheet.
- Mix the honey & the olive oil in a bowl. Salt the eggplants & brush them with the mixture.
- Bake for 30 minutes or so till the eggplants get brown.
- In the meantime, crush the half-clove of garlic & mix it with the unctuous 'Fromage Blanc'. Add the lemon juice, season with salt & pepper, & drizzle with olive oil.
Serve warm with mint leaves & unctuous 'Fromage Blanc'.
