Tchatchouka with sardines

2 tins of sardines to fry in churned butter LA PERLE DES DIEUX
1 onion
1 clove of garlic
4 tomatoes
2 small zucchini
1 eggplant
100g cherry tomatoes
1 tsp cumin
1 tsp paprika
A few sprigs of basil
Olive oil
Salt, pepper

Peel and mince the garlic and onion. Wash eggplant, zucchini, tomatoes and cherry tomatoes.
Dice the aubergines and zucchini. Remove the stems from the tomatoes and cut them into cubes.

Fry the onion in a little bit of olive oil in a pan.
Add the diced eggplant, zucchini and tomatoes.
Add the minced garlic, cumin, paprika, salt and pepper and cook for 30 minutes over low heat, covered.

Add the sardines with the churned butter, the halved cherry tomatoes and cook for 5 minutes, sprinkle with chopped basil.

(Remember to pass the tin of sardines under lukewarm water to melt the butter)
