El Vado
73% pure cocoa butter from Mexico - Chipas State is a marvel in the South of Mexico near the border of Guatemala which is famous for its mountainous regions and its tropical forest dotted with Mayan sites. El Vado, 'Gods' food', rare Criollo cocoa from the mountains, grows there on the foothills of the Sierra Madre, in La Rioja plantation benefiting from a hot and humid climate. The three different fermentations this cocoa undergoes within five days give it a unique savor of black fruits and spices enhanced by the strong and intense aromas of the cocoa from the mountains.
Amazonas
73% pure cocoa butter from Peru - In the Amazonas region in the North of the Andean Cordillera, there is a middle altitude mountain area close to the Amazonian forest. In the heart of this tropical rainforest, the rare red and yellow Criollo cocoa trees grow on the hillside. Two varieties highly reputed for their subtle aromas. This grand cru offers a rich aromatic palette: an intense cocoa flavour with red fruit notes to start with, then some delicate floral aromas, to end up with delicate woody notes.
Porcelana
73% pure cocoa butter from Venezuela - Zulia State is located in the North-West of Venezuela near the Columbian border called Cherished Sun Earth where you can find the Maracaibo lake. Millenium plantations of Porcelana, a rare Criollo cocoa, grow on its bank in the heart of the savanna in a hot and humid climate. The cocoa takes its name from the white colour of the cocoa pod. Its roasting reveals delectable chocolate with strong aromas with no bitterness. First, you taste incredible honeyed flavors and slightly roasted dried fruits, then come red fruit aromas followed with flowery notes.
Mava Ottange
73% pure cocoa butter from Madagascar - Mava Ottange is a rare Criollo cocoa which grows in the fertile valley of Sambrirano, a leafy enclave in the heart of a high primary forest experiencing a hot and humid climate. The cocoa trees benefit from a procedure for organic growing and their cultivation respects an ecosystem based on agroforestry. The Ottange plantation is reputed for its exceptionally flavoured cocoa with no bitterness. Lemon aromas come out first, followed by a nice depth of tropical yellow fruits with a hint of vanilla to finish with a final pronounced taste of roasted hazelnuts.
