The navette is a Provencal biscuit in the shape of the boat that brought Marie Jacobé, Marie Salomé and Sara from Palestine to the coasts of Provence. The village of Saintes-Maries de la Mer in Camargue was named after these three saints.
Mr Aveyrous was the one who came up with the idea of making this particular biscuit in 1781 to remember those days.
The biscuits were traditionally bought by dozen for good luck throughout the twelve months of the year.
Located in Haute-Provence, in a 19th Century former industrial building at the entrance of the town of Forcalquier, the Biscuiterie de Forcalquier makes all its products with naturally low-gluten artisanal flours coming from organic farming. This means that farmers use neither pesticides, nor insectisides.
This recipe has been revisited by Pierre Hermé. Give it a try! You will remember it for years to come!
