Crème Brûlée with Violet Candies
INGREDIENTS:
200g of violet candies
5 egg yolks
80g of whole milk
350g of liquid cream
5 egg yolks
80g of whole milk
350g of liquid cream
DIRECTIONS:
- Crush the 200g of candies
- In a mixer, add your egg yolks and 100g of your candy powder and mix for 30 seconds at speed 3.
- Add the whole milk and cream to the mixture. Mix for 20 seconds at speed 2.
- Pour into a ramekin, and cook for one hour at 210°F.
- After letting it rest for 4 hours in the cold, sprinkle the rest of your powdered candies on top.
- Caramelize with a blowtorch and enjoy!
