The black truffle or Périgord Truffle (Tuber Melanosporum) is the most renowned truffle of all because of the richness and complexity of its flavor, woody, musky and even sweet taste. Its flesh is black on the outside with white veins on the inside that indicates maturity. Its season goes from November to April. It grows mainly in the South of France, in Spain and in Italy.
Harvested at perfect maturity and with a regular shape, our whole truffles are of extra quality. Keep for about 3 years, they will enhance your dinners unexpectedly and in any season!
Canned truffles are as good as fresh truffles but must be worked differently. Slice them and add at the end of cooking to ensure a slight reheating, like on a risotto, roast poultry, pasta or eggs.
