The black truffle or Périgord Truffle (Tuber Melanosporum), is the most renowned truffle of all because of the richness and complexity of its flavor, woody, musky and even sweet taste. Its flesh is black on the outside with white veins on the inside that indicates maturity. Its season goes from November to April. It grows mainly in the South of France, in Spain and in Italy.

Canned truffles are as good as fresh truffles but must be worked differently. To add in an egg scramble, a mashed potato or in homemade terrines.
